Tropical Grilled Watermelon Salad with Feta and Mint

4 Servings

Ingredients

1 small seedless watermelon, cut into 1-inch thick slices

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon lime zest

2 tablespoons lime juice

Salt and black pepper to taste

4 ounces feta cheese, crumbled

Fresh mint leaves, torn, for garnish

Optional: toasted coconut flakes for garnish

Instructions

Preheat your grill to medium-high heat.

In a small bowl, whisk together olive oil, honey, lime zest, and lime juice to make the dressing. Season with salt and black pepper to taste.

Brush both sides of watermelon slices with the prepared dressing.

Place the watermelon slices on the preheated grill and cook for 2-3 minutes per side, or until grill marks form and the watermelon is slightly caramelized.

Remove the grilled watermelon slices from the grill and let them cool slightly.

Arrange the grilled watermelon slices on a serving platter. Sprinkle crumbled feta cheese over the watermelon slices.

Drizzle any remaining dressing over the salad. Garnish with torn mint leaves and optional toasted coconut flakes for added flavor and texture.
