Greek Honey Sesame Bars

Greek Honey Sesame Bars, called Pasteli, are the original power bar. With only 2 ingredients, this ancient recipe couldn’t be easier to make. And you’ll be hard pressed to find someone who doesn’t love this satisfyingly sweet, protein rich treat!

Yield: 20 Servings

Cook Time: 10 Minutes

Ingredients

7 ounces sesame seeds
7 ounces (½ cup plus 1 tablespoon) honey
Parchment paper
Spray olive oil or olive oil and a brush

Directions

Start by roasting the sesame seeds. The easiest way to roast them is by getting a frying pan hot and then adding the seeds. Using a spatula stir the seeds until golden brown (2-3 minutes) and then remove from the pan. Be careful they don’t burn!

Take two large pieces of parchment paper and spray one side of each sheet evenly with olive oil. If you prefer, lightly brush with olive oil. Set aside.

Place honey in a small pan and bring to a boil. Allow to boil for 4-5 minutes, stirring frequently so it doesn’t scorch. If you are using a candy thermometer you want it to reach a temperature of 250F.

Add toasted sesame seeds and continue to boil for 2-3 more minutes, stirring until the seeds are evenly distributed. To check and see if it’s ready, drop a small amount in a bowl of cold water. If it keeps its round shape, it’s done! If it doesn’t hold its shape, let it boil a bit longer and retest if needed.

Remove honey sesame mixture from the heat and spread on the greased side of one sheet of parchment. Place the second sheet of parchment on top, oil side down. Then, using a rolling pin, roll the mixture to the desired thickness. To achieve a thinner, crispier bar, roll out to mixture to approximately ¼ inch thick.

After approximately 15 minutes cut into 20 pieces with either a greased knife or pizza wheel.

Once fully cooked, layer the bars into an airtight container with parchment paper in between so they don’t stick.

Next time, consider adding ground cinnamon, lemon or orange zest, or using different seeds or nuts – like pistachios!
